How do I cook a Kaiserschmarrn?

One day the emperor went hunting in the Dachstein Salzkammergut. He was surprised by bad weather and sought shelter with a farming family. The emperor was hungry and asked the farmer's wife if she could cook something for him. She had only eggs, milk, flour and fruits and made a "Kaiserschmarrn" out of them. The emperor praised the dish to the skies. Then the farmer's wife:

Oh, this is just a "schmarrn" (dialect for nothing special)

The emperor responded:

Yes, but a "Kaiserschmarrn" (schmarrn for the emperor)

And this is the origin of the most famour dessert from Austria: the Kaiserschmarrn

You need these ingredients:

  • 0.25 l milk
  • 4 egg yolk
  • whipped egg white from 4 eggs
  • salt
  • sugar
  • 300g flour
  • 3 tablespoons of Rum
  • 50g raisins
  • 150g butter

 

This is how you cook the Kaiserschmarrn

Stir milk, egg yolk, flour, rum, salt and sugar until smooth and fold in the whipeed egg white. Heat butter in a pan, pour in approx. 1/8 l dough, sprinkle with raisins, bake both sides, tear into pieces and keep warm.

Repeat this baking process until the dough is used up. Serve the Kaiserschmarrn with sugar and fruit puree.

Plum puree, elder puree or apple puree  - the fruity freshness to the Kaiserschmarrn

 

The ingredients and the preparation of plum puree

1 kg plums, 15 dag sugar, 1/8 l water, 1 cinnamon bark, 2 cloves, juice and peel from 1 lemon

Boil water with sugar, lemon juice and peel, cloves and cinnamon bark. Wash and halve the plums, add them and bring to boil while stirring constantly. Let the fruit continue to boil until the plums have half disintegrated. Serve with Kaiserschmarrn afterwards.

 

The ingredients and the preparation of elder puree

1l elder berries, 15 dag sugar, 1 tea spoon cinnamon, 1 tea spoon cloves, 1 bag vanilla sugar, preserving with 2 tablespoons of cornflour and approx. 0.25l milk, 3 tablespoons of Rum

Pluck the elderberries from the cone and steam with 1/8 l water, sugar and the spices until soft, stir in the preserving, add a dash of rum and steam again.

When the plums are ripe, add a handful of cored and halved fruits. Then serve with Kaiserschmarrn.

 

The ingredients and the preparation of apple puree

1 kg apples, 5 dag sugar, 1 cinnamon bark, 4 cloves, 1 lemon peel

Peel and quarter the apples and remove the casing. Boil the sugar with the spices in approx. 0.25 litres of water, add the apples and stew until soft. Then serve with Kaiserschmarrn.
