What is a “Dörrhüttl”?
The small buildings work much like an oven, with brick vaults and timbered construction for the drying boards. When the fruits ripen in autumn, apple slices, plum halves and pears will be dried for one or two days at about 70 ° C in the Dörrhüttln to preserve them for winter.
In the past, the Dörrhüttl were necessary for the survival of the population, today they are a kind of cultural asset that deserves to be taken care of. Some are still in operation, but many are in the orchards and waits for their use.
How Rudi discovered his love for the “Dörrhüttl”:
The love for the “Dörrhüttln” in the Salzkammergut was discovered by Rudi Aumüller, as a neighbor began to build a Dörrhüttl according to ancient tradition. When his neighbor explained to Rudi what this building was, and later also brought some homemade dried fruits, Rudi knew what delicacies could be prepared in this little huts.
During various walks through Bad Goisern, he was able to discover and photograph new “Dörrhüttl” buildings. He has discovered around 25 of them in Bad Goisern so far.
The owners were all happy to give more information about their cultural assets. In this way, Rudi not only learned the owner but also the builder and the year in which the “Dörrhüttl” was built. Many details about the drying of fruits in the Salzkammergut were readily told by the owners.
Over time, a lot of information about this tradition came together, so Rudi decided in autumn 2009 to write the “Dörrhüttl Pass”, a small guide which gives a lot of information about the ancient tradition, especially in the Salzkammergut, of preserving fruits.
