How do I cook Kaesespaetzle (cheese noodles)?

Cheese noodles, in Austria called "Kaesespaetzle", "Kasspatzn" or "Kasnockn" , are in season all year round. A hearty, traditional delicacy, which you should eat at least once during your stay in the Holiday Region Dachstein Salzkammergut. So that you can cook it at home, we have asked our hosts for the recipe.

You need these ingredients

  • 400g flour
  • 4 eggs
  • 180 ml milk
  • salt, pepper, nutmeg
  • 2 onions finely chopped
  • 40 dag grated cheese (that one you like)
  • onions to roast

This is how you make the Kaesespaetzle

Process the ingredients to a smooth dough and drip into boiling water with a late reading sieve. As soon as the spaetzle float on top, drain and cool. Roast the onion in a hot pan until glassy, add the spaetzle and toss. Add the grated cheese (Traungold, Berrgbaron, beer cheese, etc.) and roast until a crust forms on the bottom. Then turn, sprinkle with roasted onion and serve with green salad.

Our advice: Roast some more mountain cheese in the pan until a crust forms and put it on the finished cheese noodles.
