How do I cook a wild garlic soup?

When spring arrives in the Dachstein Salzkammergut and the snow slowly melts, the wild garlic also emerges. And then also the time of the wild garlic soups begins. This traditional recipe from the Holiday Region Dachstein Salzkammergut shows you how to cook wild garlic soup.

You need these ingredients

  • 2 – 3 hands full wild garlic
  • 1 onion
  • 25 g butter
  • 1 small potatoe
  • 1 l beef soup
  • ¼ whipped cream
  • 2 semmels (Austrian bun)
  • salt
  • pepper

 

This is how you cook a wild garlic soup

First melt the butter and fry the onion in it until transparent. Pour this into the beef soup and add half of the cream, the chopped wild garlic, the diced potatoes and the diced rolls. Let it boil for 10 minutes. Puree the soup with a blender and season with salt and pepper to taste. Finally, beat the cream and stir into the soup with a whisk.

Our tip: Serve the wild garlic soup with bread crumbs and dried flowers.

Tips for collecting wild garlic

Collecting wild garlic is fun, but can also be dangerous if you are not concentrated. Because the wild garlic looks almost like lily of the valley and autumn crocus, which grow at the same time, but are highly poisonous.

The wild garlic can be recognized by the fact that each leaf has its own stem and the leaves smell strongly of garlic. If you're not sure, it's best to take an expert with you and get a detailed explanation of the differences.

The younger the wild garlic plant, the better and softer it is.
